â SipâandâSavour Corner
Hey teaâlovers! Iâve been tinkering in the kitchen and the kettle, whipping up a batch of Canadian mapleâspiced chai thatâll make you feel like youâre curled up in a log cabin while the snow falls outside. For those who prefer a dryâclear head, thereâs a Canadian CranâApple Maple Mocktail that sings the same tune without the buzz.
If youâve gone plantâbased, youâll love the Canadian vegan berryâbanana maple smoothie â thick, bright and packed with the goodâgood of local farms. Grab a cup, gather the crew, and let the chatter flow like the Fraser River in spring. The full recipes are at the end of this bulletin.
âď¸ WinterâWarmâUp & Outdoor Yoga
Last month I swapped the couch for the cold and started cardio out in the backyard. The rule of thumb? Snowâpants and a heavyâduty parka are nonânegotiable when the mercury dips below â3âŻÂ°C. Frostbite loves a windy day, so gloves and a face mask are your best buddies.
Yogaâs been my secret weapon, stretching the muscles that will carry us through the long summer days of gardening, family fun, and, of course, the next ATV sprint. Iâm eyeing a 4âŻa.m. start for my walks â just enough time to beat the sun, get the garden sorted by noon, and still have the afternoon for a good cuppa with you all.

đď¸ Snowmobile Spotlight â âNorthern Lightsâ in the Making
Big news, fellow snowâriders! A film crew rolled into town in early February, scouting locations for âNorthern Lights,â a story about a young girl who dreams of becoming a pro snowâmobile racer. Our very own Doug Godard of SnomanâŻInc. stepped up, pointing them toward St.âŻJeanâŻPark and the Hall.
Dougâs confidence was right there: âI know just the place.â The crew loved the sweeping fields, the whispering pines, and the rugged trail that feels like a character on its own. Filming kicked off faster than a sled on fresh powder, and the whole town will buzz with the excitement of seeing our backyard on the big screen.
Goal: Every Canadian watches the movie and tells at least one friend about the filming in Canada. The more friends you tell about âNorthern Lights,â the higher your #CanadianKarmapoints that day. Let's make this movie #1 in it's movie category. #Canada #NorthernLights #movie #snowmobile
đŹ Worldwide Community Screening Party
Mark your calendars, eh? If your in town that day, get your food from Bistro 758 once the trailer drops on vitamincanuck.com. At my house I expect a night of popcorn, hot cocoa, and stories about the rides that inspired the movie. If anyone can snag an interview with the director, give me a shout â Iâve got a few questions thatâll make the audience feel the rush of the trail. The more Youtube views we can get, the better the movie will do.
After the screening, letâs flood the internet with reviews that celebrate Canadian talent, the spirit of the north, and the sheer joy of riding with the wind in your face.
This is my favourite neighbourhood date night dining and place to order from:
Bistro 758 is a cozy, casual dining spot situated at 164 Caron St, Saint Jean Baptiste, MB R0G 2B0, offering a diverse menu that includes burgers, breakfast items, sandwiches, poutine, and even Chinese-inspired dishes. The restaurant is known for generous portions, friendly service, and a welcoming atmosphere. My friend Tao is the chef.
Hours of Operation (as of March 15, 2026):

đ Canadian Power Toboggan Championships â A Quick Recap
The 64th Annual CPTC roared through Beausejour on MarchâŻ7â8. Hereâs the lowdown:
- Speed: Snowâmobiles screaming past 170âŻkm/h on a halfâmile ice oval, flanked by 3,700 strawâbale barriers for safety.
- Classes: Stock, Modified, Vintage, Motorcycle, plus the KittyâŻKat division for our budding young racers.
- Prize: A $20âŻ000 guarantee for the USSA ProStar Cup Tour â talk about a serious showdown!
- Family Fun: A warm zone, tasty concessions, and over 200 volunteers keeping the event humming.
If you missed it, catch the highlights on the CPTC YouTube channel â the roar of the engines will give you gooseâbumps even on a summerâs day.
đ˛ Trail Tales & Friendly Reminders
A recent chat reminded me that proper gear is priceless. A racer back in the day tackled "The Tough Man" on boogie wheels. On a packedâsnow run at up to 170âŻkm/h without goggles or face covering â daring, yes, but we all know safety first. Keep those ice picks, helmets, and warm layers handy; the race respects no one whoâs unprepared.
Tough Man Races: While not officially branded as "Tough Man Races," the CPTC is known for its demanding physical and mental challenges. Racers endure 2g forces in corners, requiring significant arm and core strength.
Keep the Good Vibes Rolling
- Try the new drinks at our next tea meetâup and let me know your favourite.
- Join a morning walk or a yoga session.
- Volunteer at the next CPTC or film event â every helping hand makes the experience richer.
- Share your stories on social media with #NorthernLightsCanada and tag us. Letâs show the world how we celebrate winter, community, and a love for the open trail.
Together weâre stitching a tapestry of kindness, adventure, and mapleâsweet camaraderie. From my kettle to your doorstep, thank you for being part of this wonderful crew.
Stay warm, stay brave, and keep that Canadian spirit shining bright.
Cheers,
Natalie
P.S. Got a recipe, a trail tip, or a shoutâout for a fellow rider? Drop me a line â the tea potâs always full for good news.
đCanadian MapleâSpiced Chai đ
Ingredients (makes 2 servings)
Hey there, fellow tea lover! If youâre looking for a cup that captures the crisp air of a northern fall, the sweet whisper of maple syrup, and the warm hug of spice, youâve just hit the sweet spot. Below is a stepâbyâstep guide that will have you brewing a sip worthy of any tea.
Ingredients (makes 4 generous mugs)
Strong black tea (e.g., Assam or Ceylon) 4âŻtsp (loose) or 4âŻbags
Pure maple syrup (gradeâŻA, amber) 2âŻtbsp
Whole milk or a plantâbased alternative 1âŻcup
Water 2âŻcups
Cinnamon sticks 2 (plus a pinch of ground for garnish)
Whole cloves 4
Green cardamom pods, slightly crushed 4
Fresh ginger, thinly sliced 1âŻtbsp
Nutmeg, freshly grated a light pinch
Seaâsalt just a pinch
Instructions
1. Heat the base â In a medium saucepan combine the water, ginger, cinnamon sticks, cloves, cardamom, and nutmeg. Bring to a gentle simmer; let the spices mingle for about 4âŻminutes.
2. Add tea â Remove the pan from the heat and stir in the black tea. Cover and let it steep for 3âŻminutes.
3. Sweeten â Stir in the maple syrup while the mixture is still warm. The syrup dissolves nicely and spreads its golden flavour throughout.
4. Introduce the milk â Return the pan to low heat and pour in the milk (or your chosen alternative). Warm the blend just until it begins to steamâdonât let it boil.
5. Finish with a pinch of seaâsalt â This tiny touch amplifies the sweetness and balances the spice.
6. Strain and serve â Use a fine mesh strainer to pour the chai into mugs. Sprinkle a tiny pinch of ground cinnamon on top for a fragrant finishing touch.
7. Enjoy responsibly â Take a moment to inhale the aroma, feel the warmth, and let the flavours transport you to a cozy cabin with a view of mapleâladen trees.
Tips for the Perfect Cup
- Use filtered water for a clean backdrop.
- If you prefer a stronger maple note, add an extra halfâtablespoon.
- For a dairyâfree version, oat milk or almond milk works beautifully and adds a subtle nuttiness.
- Adjust the spice amount to suit your palate; a little more ginger gives a zingy edge, while extra cinnamon leans toward sweet comfort.

đâŻEscuminac Late Harvest Maple Syrup â 500âŻmlâŻđ
Pure, organic, Canadaâgrown â the gold that makes every breakfast a little more âehâmazingâ.
You know, out here among the Escuminac, the trees have been watching the seasons change for generations. When the leaves turn that deep amber, the sap gets a touch of the autumn chill, and thatâs when the magic happens. The result? A darkâgold elixir that tastes like a hug from MotherâNature herself.
Itâs not just syrup. Itâs a piece of our heritage, a story thatâs been handed down from one neighbour to the next, from coast to coastâalways with a smile and a hearty âeh?â.
Why This Bottle Belongs on Your Table
- Intense darkâgold colour that catches the light like a sunrise over the Maritimes.
- Aromatic notes of caramel, brownâsugar and a whisper of rye â a flavour that lingers long after the first drizzle.
- 100âŻ% pure, organic, gathered from trees that have never known a pesticide.
- Made in Escuminac, Quebec, Canada, from a familyârun operation that respects the land and the people who love it.
Escuminac Late Harvest Maple Syrup is a premium, organic, 100% pure Canadian maple syrup produced at the end of the sugaring season in Escuminac, Quebec. Harvested when the sap is warmed by the spring sun, it develops a deep, dark amber colour and a bold, robust flavour profile with pronounced notes of rye, caramel, and roasted sugar. Classified as Grade A Dark, Robust Taste (formerly Grade B), it is ideal for both culinary use and gifting.
The syrup is certified organic (USDA and EU Organic), carbon-neutral, gluten-free, vegan, and contains no additives, preservatives, or artificial flavours. It is unblended, meaning it comes exclusively from a single forest, ensuring full traceability from forest to bottle. The syrup is bottled directly at the maple farm by producer Martin Malenfant.
Every pour carries the crisp, clean air of a Quebec morning, the quiet strength of a mapleâleaf flag waving proudly. Itâs the kind of syrup that makes pancakes feel like a celebration and waffles the centrepiece of a Sunday brunch.

đ˝ď¸ Glazed Salmon on Cedar Plank
Serve 4 generous portions â perfect for a family dinner or a friendly gathering.
Ingredients
Fresh salmon fillets, skin on
4âŻĂâŻ200âŻg
Escuminac Late Harvest Maple Syrup
ÂźâŻcup (ââŻ60âŻml)
Dijon mustard
2âŻTbsp
Fresh lemon juice
1âŻTbsp
Minced garlic
1âŻtsp
Freshly grated ginger
½âŻtsp
Seaâsalt & cracked black pepper
to taste
Fresh dill, chopped
1âŻTbsp
Cedar plank (soaked in water for 30âŻmin)
1 large piece
Method
Prep the plank â Preâheat the oven to 200âŻÂ°C (or fire up the grill). Place the soaked cedar plank on a baking sheet and let it warm for a few minutes. The wood will release a subtle, smoky aroma that hugs the salmon.
Mix the glaze â In a small bowl whisk together the Escuminac Late Harvest Maple Syrup, Dijon mustard, lemon juice, garlic, and ginger. Season with a pinch of seaâsalt and black pepper.
Season the fish â Pat the salmon dry, then sprinkle each side lightly with seaâsalt, pepper, and the chopped dill.
Apply the glaze â Brush a generous layer of the mapleâmustard mixture over the flesh side of each fillet. Reserve a spoonful for the final finish.
Cook â Lay the salmon, skin side down, on the heated cedar plank. Slide the plank onto the grill or into the oven. Roast for 12â15âŻminutes, or until the flesh flakes easily with a fork and the glaze has caramelized into a glossy coat.
Finish â Drizzle the reserved glaze over the hot salmon and let the aroma fill the kitchen.
Serve â Pair with roasted potatoes, a crisp green salad, or simply a warm slice of freshâbaked bread.
The dark, robust notes of Escuminac syrup mingle with the smoky cedar, creating a dish that sings of Canadian wilderness and homeâcooked comfort.
If youâve ever wished your pantry could taste a little more like a rugged coastline, a quiet forest, and a warm kitchen all at once, reach for Escuminac Late Harvest Maple Syrup. One bottle is enough to sweeten your mornings, elevate your dinner plates, and remind you that great things still grow in our great north.

Because the best syrup deserves the best partner.
Ingredients
For the crust
- 2âŻÂ˝âŻcups (315âŻg) allâpurpose flour
- 1âŻtsp salt
- 1âŻtsp sugar
- 1âŻcup (225âŻg) unsalted butter, chilled & cut into cubes
- ½âŻcup (120âŻml) iceâcold water
For the filling
- 6â7âŻlarge Apples (a mix of Granny Smith and Honeycrisp), peeled, cored & sliced Âźâinch thick
- ÂźâŻcup (60âŻml) Canadian Heritage Organics Dark Maple Syrup
- ÂźâŻcup (50âŻg) brown sugar
- 2âŻtbsp allâpurpose flour
- 1âŻtsp ground cinnamon
- ÂźâŻtsp ground nutmeg
- ÂźâŻtsp salt
- Zest of 1 lemon
- 1âŻtbsp fresh lemon juice
Directions
Make the crust â In a large bowl, whisk flour, salt and sugar. Toss in the butter cubes and, with a pastry cutter or two forks, blend until the mixture resembles coarse crumbs. Drizzle the iceâcold water, stirring gently until the dough just comes together. Divide into two discs, wrap in plastic, and chill for at least 30âŻminutes.
Prep the filling â In a bowl, combine sliced apples, dark maple syrup, brown sugar, flour, cinnamon, nutmeg, salt, lemon zest and juice. Toss until every slice is glossy and coated. Set aside for 10âŻminutes â this lets the flavours mingle.
Assemble â Preheat the oven to 220âŻÂ°C (425âŻÂ°F). Roll out one disc on a lightly floured surface to fit a 9âinch (23âŻcm) pie dish. Gently press the dough into the pan, leaving a small overhang. Spoon the appleâmaple mixture in, spreading evenly.
Top it off â Roll the second disc and cut into strips for a lattice, or use a wholeâround top for a classic look. Brush the top with a light coating of maple syrup for a golden sheen.
Bake â Place the pie on a parchmentâlined baking sheet. Bake for 15âŻminutes, then reduce heat to 180âŻÂ°C (350âŻÂ°F) and bake another 35â40âŻminutes, or until the crust is deep amber and the filling bubbles.
Cool & serve â Let the pie rest for 20âŻminutes before slicing. Pair with a dollop of vanilla iceâcream or a splash of extra dark maple syrup for that âwowâ factor.
Result: A buttery, flaky crust hugging a sweetâspiced appleâmaple heart, each bite echoing the rich forests of Canadaâs mapleâfilled hills.

đ Canadian Vegan BerryâBanana Maple Smoothie Blend đđŤ
Hey there, fellow smoothie lover! If youâre looking for a bright, plantâbased drink that feels as cosy as a cabin by the lake and tastes as sweet as a mapleâsyrup drizzle, youâve landed in the right spot. This recipe brings together the best of our northern berries, a ripe banana, and a splash of pure Canadian goodness. Itâs perfect for a postâskiârun refuel, a workâfromâhome pickâmeâup, or simply a tasty way to honour the season.
đ Ingredients (Makes 2 generous servings)
1âŻcup
Frozen mixed berries (blueberries, strawberries, raspberries â preferably from a local farm)
Loads of antioxidants and that unmistakable northern flavour
1âŻlarge
Ripe banana (the sweeter, the better)
Creamy texture and natural sweetness
1âŻcup
Unsweetened oat milk (or any plant milk you fancy)
Gives a smooth mouthfeel without dairy
½âŻcup
Coldâpressed canola oil (optional, for extra richness)
Adds a subtle, buttery note while staying plantâbased
2âŻtbsp
Pure maple syrup (grade A)
A genuine Canadian touch
1âŻtsp
Ground cinnamon
Warm spice that pairs wonderfully with berries
Pinch
Sea salt
Brings out the flavours
Optional toppings
Chia seeds, toasted coconut flakes, a drizzle of extra maple syrup
For a little crunch and visual flair
đĽ StepâbyâStep Instructions
- Gather your gear â A sturdy blender, a measuring cup, and a friendly smile are all you need.
2. Prep the fruit â If the berries are not already frozen, give them a quick chill in the freezer for about 20âŻminutes. This keeps the drink icy without adding ice cubes that water down the flavour.
3. Load the blender â Add the frozen berries first, then the sliced banana, oat milk, and optional oil.
4. Season it â Sprinkle in the cinnamon, a tiny pinch of sea salt, and pour the maple syrup over the top.
5. Blend â Start on low speed, then crank it up until the mixture is silky smooth and free of lumps. This usually takes 30â45 seconds.
6. Taste test â Give it a quick sip. If youâd like a touch more sweetness, add a drizzle of maple syrup and blend for another few seconds.
7. Serve with style â Pour the smoothie into two tall glasses. If youâre feeling fancy, swirl a bit of extra maple syrup inside each glass, then scatter chia seeds or toasted coconut on top.
8. Enjoy responsibly â Sip slowly, feel the berryâbanana harmony, and let the Canadian vibes lift your spirits.
đż Pro Tips for the Perfect Blend
- Banana tip: Use a banana thatâs fully ripe (the skin will be speckled yellow). It blends effortlessly and adds natural sweetness.
- Berry boost: Add a handful of fresh spinach for extra greens â the flavour stays hidden while the nutrition skyrockets.
- Coldâpressed oil: If you prefer a lighter drink, simply omit the oil; the oat milk already provides creaminess.
- Seasonal swap: In summer, replace the frozen berries with fresh ones and add a splash of cold spring water for a lighter feel.
